Street vendors serve this dish from their carts to people who eagerly line up for it. From afar, you can already hear the “Koshary man” tapping his metal spoon on the edge of the bowl.

Koshary is like the second cousin of Mujaddara, but with far more flavor, as it is enhanced with a spiced tomato sauce and a delicious cumin sauce.

Koshary is a brilliant way to use pantry staples. It’s a cousin of the Middle Eastern Mujadara. In short, it’s a cozy bowl of simple ingredients: spiced lentils and rice, combined with chickpeas and small noodles. The whole dish is topped with a tomato sauce that’s flavored with vinegar (which is absolutely delicious!). And then – wait for it – it’s crowned with savory, crispy fried onion rings.

Although preparing this Koshary recipe takes some time, each component is quite easy to make.

At home, Koshary is served as a family meal with extra tomato sauce and crispy onion rings! To round off the dish, I usually add a quick Mediterranean salad made from 3 ingredients, simply dressed with olive oil and lemon juice.
